Planter’s Punch.

I’ve been exploring different Planter’s Punch recipes and I made one tonight that I think is better than Stephen Remsberg’s version and Smuggler’s Cove. I like those quite a bit, but feel that I’d like something a bit stronger, more rummy. Here is what I came up with:

1 oz Rhum Barbancourt 8 Star

1 oz Coruba

1 oz Planteray Xaymaca

1/4 oz Demerara Syrup (Liber)

1/2 oz Simple Syrup

3/4+ fresh lime juice

2 dashes of bitters

I used hampden rum fire as I don’t have any high esters and used FS 2008 for the dark rum. It tasted okay but the rum fire over-powered it. 5/10

A while back I purchased a bottle of Suze to make a white negroni, which subs out Campari for Suze (and uses a different vermouth). That got me thinking about other cocktails in which you can replace Campari with Suze, which lead to me creating this cocktail! It is a riff on a jungle bird, but the taste profile is totally different. The colour is a nuclear yellow with a green tint, really cool aesthetic.

Canary’s song

  • 45 ml unaged cane juice rum
  • 22,5 ml suze
  • 15 ml lime juice
  • 15 ml honey syrup (3:1)
  • 45 ml pineapple juice (clarified would be extra points)
  • 2 dashes orange bitters
  • 5 drops saline solution (20%)
    Shake all ingredients with ice cubes. Double strain into an Old Fashioned glass with a large ice cube. Garnish with a single pineapple frond.

I’ve tried this recipe with both Savanna Creol 52 and Clairin Le Rocher. Ideally you pick something with some character and abv around 50%. Like a Clairin, Savanna, Mexican, Mhoba, etc.
