Lese gerade etwas über die Rolle der Säure beim Brennen und im Destillat. Dabei bin ich hier drauf gestoßen. > [@](#): > > The charcoal production is not to make activated charcoal. Camus hat eine Cognac Reihe mit hohem Estergehalt, da geht es wohl drauf bis 200 mg/liter. Hat irgendjemand eine Idee wie das bei Cognac oder armagnac aus kleineren Häusern ist? Der Wein soll ja sehr sauer sein. Einerseits damit er nicht oxidiert, andererseits vermutlich wegen des Geschmacks. Schließlich werden die Säuren zu Estern - Dunder ist auch ein sehr saures Gemisch. ---

das hatte ich auch gesehen, und mich gefragt, ob das nicht doch Rockleys sind, zumindest der 86er und 20er? Interessant finde ich, dass der 86er ja nur aus der Gregg Farm Pott Still kommt, während der 20er ein Blend aus Gregg Farm und Vulcan ist. Daraus könnte man ja ableiten, dass der Rockley Style tatsächlich maßgeblich von der Gregg Farm beeinflusst wird. ---

Das hat ja Richard Seale so auch geschrieben. Rockley Style wurde mit der Vulcan (als Wash Still) und der Gregg (als Spirit Still) in Kombi produziert. Das hat nichts mit Blend oder ähnlichem zu tun. ---

Ich habe jetzt nochmal auf den Etiketten nachgeschaut. Es steht dort folgendes beim 86er ‚Destillation: Gregg pott still‘ beim 2000er ‚Destillation: Gregg pott still, Vulcan chamber still & column still‘ beim 2007er ‚Destillation: Gregg pott still & column still Wenn die Brennvorgänge gemeint sind, interpretiere ich es so, dass beim 86er der erste und zweite Brennvorgang auf derselben, d.h. der Gregg Farm Pott Still durchgeführt wurden, beim 07er das Grunddestillat auf der Gregg Farm und der zweite Brennvorgang auf einer Kolonne. Beim 00er scheint es dann gleich drei Brennvorgänge gegeben zu haben, inkl Vulcan. Da in der Verkostung der 86er als Rockley ausgemacht wurde, passt das aber auch nicht so ganz zu der Aussage von Richard Seale, dass Rockley Style ein Produkt der beiden, d.h. der Gregg Farm und Vulcan ist, insb. der Spirit Still auf der Vulcan (ich hatte immer verstanden, dass der zweite Brennvorgang der für die Aromen maßgebliche ist). Oder, der 86er Extreme ist eben doch kein Rockley. Oder es ist der erste Brennvorgang (auf der Gregg Farm), der maßgeblich für die Rockley typischen Noten ist Ich hoffe, dass wir nach der Rum Depot Verkostung etwas schlauer sind. Einige interessante Fragen an AG hätte ich schon 😉 ---

werde berichten, und mir vorab einen kleinen Fragenkatalog zurecht legen 😉 Ich könnte mir bei AG allerdings auch vorstellen, dass er kein wirkliches Interesse hat, bei dem Rockley Mythos für Aufklärung zu sorgen, umso mehr wenn diese alte Destille jetzt teuer renoviert wird. Mein letzter Stand ist, dass die metallurgische Untersuchung positiv ausgefallen ist, d.h. beim Brennen zumindest keine gesundheitsgefährdenden Stoffe austreten. ---

Ein Freund von mir interessiert sich sehr für Armagnac, möchte da nun etwas tiefer einsteigen und hat mich gefragt ob ich ihm bei der Auswahl seines nächsten Flaschenkaufes helfen kann. Leider habe ich von Armagnac gar keine Ahnung. Kann einer von euch vielleicht helfen und eine (oder auch zwei) Empfehlung(en) aussprechen? Wir haben einmal zusammen den 1999er Armagnac Domaine de Baraillon Brut de Fut verkostet, der kam sehr gut an. ---
